Fermentation Festival all Weekend!

The Free School is hosting the Portland Fermentation Festival all this weekend, December
6th and 7th at the City Repair Temple.

The Portland Fermentation Festival is a convergence of people sharing skills around the
fermentation process. This will be your chance to share your favorite fermented food or
drink recipe: in practice! We're taking over City Repair's Temple headquarters at 3125 E
Burnside to have workshops on everything you can imagine being fermented.

Saturday

12pm - 1pm: Bottling wine with Marc
This is my first ever batch of wine that I'll be bottling using old wine bottles. Come
join me in learning how to take this wine made from blackberries and properly transfer it
from a 5 gallon carboy into 750 ml bottles without disturbing the sediment on the bottom
of the carboy. I'll also go over the process I went through up until now.

1pm - 4pm: An introduction to homebrewing: Brewing from extract with David
Did you know you that you can easily make high quality handcrafted beer in your kitchen?
Join Dave for a hands-on demonstration of the homebrew process and learn the basic steps
and equipment needed to brew your own delicious beer!



Sunday

11:30am - 1pm: Ginger Ale and Yogurt with Matt
Learn to make home-made, fermented Ginger Al6e/Beer (non-alcoholic) and homemade Yogurt.
Each is fairly simple, so we can do both in a fairly short amount of time. I may have
home-made yogurt on hand for tasting, but I have no Ginger Ale in progress. I'll have a
ginger starter ready to go to make ginger ale and will also demonstrate how to get a
starter going. The ginger ale recipe is from the book Wild Fermentation.

1pm - 4pm: An introduction to homebrewing: Brewing from extract with David

3:30 - 4:30pm: Kimchi, Sauerkraut, and other Fermented Vegetables

4:30 - 5:30pm: Love Potions with Sebastian
Sebastian will talk about his experiences with concocting liqueurs and cordials with
aphrodesiacs. The process of making liqueurs is more akin to making tinctures than actual
fermentation but is an impressive tool for the preservation of flavor and medicinal
constituents of fruits and herbs. During this session, Sebastian will prepare some
liqueurs and discuss the process and his experience.

5:30 - 6:30pm: Kombucha with Sebastian
Learn how to make kombucha! Commonly mis-perceived as a mushroom, a Kombucha disk is
actually a symbiotic relationship composed of yeast and bacteria known as a zoogleal mat.
We will make a big batch or two and discuss the process, and health benefits. It's easy,
fun, and delicious!

6pm: City Repair Potluck
This is a great opportunity to casually get to know City Repair - we gather/start around
6pm as people come and go till about 10pm... often there are folks cooking together in
the kitchen early and some show up with prepared food.

You can ferment just about anything: Bread, Cheese, Wine, Beer, Mead, Cider, Chocolate,
Coffee, Tea, Pickles, Sauerkraut, Kimchi, Miso, Tempeh, Soy Sauce, Vinegar, Yogurt,
Kefir, Kombucha... the list goes on so join in!
